DescriptionGamma-Methylleucine is an auxiliary for copper-catalyzed asymmetric Michael reactions.(In Vivo):gamma-Methylleucine improved the binding affinity of the peptide for Y2R but also increased its anorectic activity in lean mice . Gamma-methylleucine resulted in loss of or significantly decreased the biological activity of ET-1, while high affinity for the ETA (IC50 = 0.42-0.70 nM) and ETB (IC50 = 0.17-0.43 nM) receptor was retained . Gamma-methylleucine was shown to have high antagonist activitiesin Sarafotoxin S6c-induced vasoconstriction of rabbit pulmonary artery (ET-1: pA2 8.4) and have the desirable characteristic of possessing no agonist activity at either receptor subtype .

8-Hydroxygenistein (8-OHG) is an antioxidant that can effectively scavenge nitric oxide (NO) and superoxide anion (O??). 8-Hydroxygenistein belongs to ortho-dihydroxy isoflavones (ODI) and is abundantly present in dark soy sauce and light soy sauce. Its antioxidant activity is stronger than that of its parent compound genistein. The content of 8-Hydroxygenistein is positively correlated with the antioxidant capacity of soy sauce (r = 0.959), and it remains highly stable even after being heated in boiling water for 60 minutes. During the brewing and storage of soy sauce, 8-Hydroxygenistein effectively prevents oxidative damage, making it promising for use in food antioxidant research.
