The damascones belong to a family of chemicals known as rose ketones, which also includes damascenones and ionones. beta-Damascone is a contributor to the aroma of roses, despite its relatively low concentration, and is an important fragrance chemical used in perfumery.

CYP101C1 is capable of binding and hydroxylating ionone derivatives including α- and β-ionone and β-damascone.Several of the key flavor compounds in rose essential oil are C13-norisoprenoids, such asβ-damascenone, β-Damascone, and β-ionone which are derived from carotenoid degradation.
